Second crack sound
I attribute this to the lack of time between the first and second crack, since, if I am not mistaken, that is where the reactions become exothermic and the chlorogenic acids begin to break down. As long as one is really satisfied, the process is not broken so why fix it IMO. Once a problem or lack of satisfaction is identified I find that is the time for an appropriate response. When roasted lightly for a press pot, they are quite good. Aside from a persistent tanginess that is present in most of the roasts and in the case of a Kenya AB lot, dominate vegetable characteristics , I am quite satisfied.
Today I roasted an 8oz. I listened very intently to try to differentiate between the two cracks. At first, there was a fairly loud cracking. Not very deep. It was more like the snapping of pencils. About two minutes later, there was a much softer, slightly sharper sound cracking. The snapping of toothpicks. I pressed it after three hours of rest and it was excellent.
The reason I asked about the the taste is that I wanted to make sure the coffee wasn't so baked and dried out prior to the 1st that all the cracks were anemic, the first delayed, and the second starting too early. Given the acidic taste, this is not the problem. At this point of the roast, the 2nd crack will have reached its peak and might be tailing off, and you'll be able to tell what it sounded like, and how it was different from the first.
The coffee will also be non-acidic, although it could very well be thin bodied and excessively ashy depending on the variety you are roasting. Sound requested by Cheryl Crossingham.
